Some Bread Making Goodness from Charlie White.

Thank you Charlie, for giving us some great simple recipes to try.   EnjoyProofing the yeast

  • 3/4 cup water
  • 1 tablespoon sugar
  • 1 teaspoon yeast

Mix sugar in water. Heat in a microwave for 30 seconds.  Stir again. Add yeast. Stir.  Let it proof for 5 minutes.

Simple bread dough

  • 2 cups flour (all-purpose, ½ white, ½ wheat, bread flour)
  • 2 tablespoons butter
  • salt (½ to 1 teaspoon)

Simple sweet dough

  • 1 raw egg
  • a small amount of additional white sugar
  • Vanilla extract (to personal taste)

Add all of these to the dry ingredients prior to adding the proofed yeast. I use a food processor.  Place all dry ingredients and the butter/maragarine in the food processor.  Process to mix well.  When the yeast proofs, stir it again.  Start the food processor and slowly add the yeast mix until the dough forms into a ball and travels around the processor.  Let the food processor knead the dough for you.Oil a large bowl. Place the dough in the bowl. Move the dough about until it is covered in oil.Cover the dough with a damp cloth and allow to rise.  Dough will need to rise twice. Make it, twist, form it, add to it, and bake it.Have fun!
